zucchini lasagna is not so bad

On the “fat girls” diet race again this year and I’m doing my best to win. At the very least, I don’t want to fall into last place. Katie told NaLona and NaLona told me that Katie said she would not be the loser because she couldn’t afford to be. Heh. The loser will be out around $300 bucks or so for dinner at St. Elmo Steak House. Her motivation is strong!

Little do they know that I’ve resorted to eating zucchini.

I’m not a zucchini fan. It ranks just above brussel sprouts in my yucky food list. I saw a recipe on Facebook that looked like something I might eat, so I tried it — check out my rendition of zucchini lasagna.

INGREDIENTS:
1 zucchini sliced thin
mozzarella cheese (I used the entire bag)
sausage crumbled (I used lean ground beef… Mom’s gout keeps her away from sausage)
sugar free marinara

DIRECTIONS:
Layer marinara, zucchini, meat, cheese (in that order) – and repeat for one more layer. Bake at 350° for 45 minutes.

There’s no pasta in there!

I sent some home with Mom and Carl and they taste tested it cold. Carl said he couldn’t eat it because there was pasta in there. NOPE! Heat it up and belly up, Carl, that’s zucchini — not pasta.
